I'm Kosei Miura from the Bakery Department of the Manufacturing and Sales Division.
This time, we'd like to introduce you to **"Ark Tategamori's own organic JAS wheat"**, which we use every day in our bread making!
Have you ever thought about where and how the wheat used in the bread you eat every day is grown?
Ark Tategamori has a long history of wheat cultivation. Since being reclaimed as state-owned farmland in the 1980s, wheat has been grown in "clean soil fields" where chemical fertilizers and synthetic pesticides have never been used.
The first wheat cultivated in that region was "Nanbu wheat."
This is where Ark Tategamori's organic wheat cultivation began.
However, organic farming is by no means easy.
One of the biggest obstacles is **weeds**.
In organic farming, which doesn't rely on herbicides, the battle against weeds is constant. Sometimes the weeds become so overgrown that we have to give up on harvesting and cut the crops while they're still green.
Nature doesn't always behave the way we want it to.
Even so, it's been about 40 years.
The staff responsible for cultivating wheat have persevered in this land, continuing to sow seeds and perpetuate the tradition of wheat farming.
Then, in March 2026, they decided to try milling flour again, something they had given up on about 30 years earlier.Our own flour mill has obtained organic JAS certification.Did.
This allows us to mill the organic wheat grown at Ark Tategamori ourselves and deliver it as **"home-grown organic wheat flour"**.
There are people who grow wheat in the fields.
There was someone who milled that wheat,
And there are people who use that flour to make products.
We bakeries also play that final, crucial role.
I don't grow the wheat myself, but in my daily bread making, I actually use flour that has been carefully grown on the farm.
Even the flour we casually use every day has a history behind it, thanks to the efforts of staff who have protected the fields and dealt with nature and weeds for about 40 years.
Now, we take that flour, imbued with our passion, and turn it into delicious bread to deliver to our customers.
I believe that's what we can do as a bakery.
Currently, Farm Market's bakery uses its own organic JAS-certified wheat flour and bakes each loaf of bread carefully.
When you eat bread, please be sure to appreciate not only the taste,
