Ark Tategamori's bread has a special secret. It is made with organic JAS-certified wheat that is carefully grown on their own farm and milled in-house. While the self-sufficiency rate for domestic wheat is only 10%, only 0.05% of organic JAS-certified wheat is used domestically. This means that only one loaf of bread in every 2,000 loaves can be made with this rare wheat.

We grow, grind, and bake this precious wheat with our own hands. The peace of mind of knowing that we can keep an eye on everything from the farm to your table is what makes us proud of our bread-making at Ark Tategamori.
