Do you know about a type of meat called "paika"?

Paika refers to the cartilage-containing part of a pig's belly.

At first glance, it may look a little tough, but in fact, when simmered slowly, the meat becomes incredibly tender and the cartilage becomes wonderfully soft. It's a delicious cut of meat known only to those in the know.

This time, we'll introduce "Tender Braised Pork Ribs," a dish that uses pork ribs to fully enjoy the delicious flavor of Tategamori Kogen pork.

Ingredients (for 3-4 people)

・Tategamori Highland Pork Paika (500g)
・1/3 of a daikon radish
3-4 hard-boiled eggs
1 clove each of ginger and garlic

[Broth]
・Water 400ml
・100ml of alcohol
70ml soy sauce
50ml mirin
2 tablespoons of sugar

How to make

① Blanch the pork ribs and rinse them under running water.
② Put the pork ribs, broth, ginger, and garlic into a pot.
③ Simmer slowly over low heat until tender, then add the daikon radish and boiled eggs.
④ Once the broth has reduced to the desired consistency, it's done!

The longer you simmer it, the more tender and melt-in-your-mouth the pork ribs will become.

Please enjoy the unique flavor of Tategamori Kogen pork and the texture of the pork ribs.
