I recently visited the Ark Tategamori organic wheat field to observe a controlled burn. Despite the intense heat and strong sunshine that day, the staff carried out the operation while constantly checking the surrounding area for safety. (The fire department was contacted in advance, and safety measures were taken before the operation.)

"Field burning" is one method of preparing fields for the next planting by burning away remaining weeds, dead plants, and pests. It is carried out as part of weed management that does not rely on herbicides. Even from a distance, I could feel the heat while observing, and I realized how difficult it is for the staff working in the scorching sun.

The organic wheat, carefully cultivated with time and effort, is also used as an ingredient in our "semi-dried udon noodles." Made from organic wheat grown and milled in-house, our chewy and springy "semi-dried udon noodles" are one of my personal favorite products.
