Hello.

The rainy season is over, and scorching heat is continuing in many places.
Be sure to take proper precautions against heatstroke and make it through Japan's summer in good health.

Now, one of the foods I would especially recommend in this heat is pork.
It is rich in vitamin B1, which is effective in recovering from fatigue, and is perfect for preventing summer fatigue.
Today, I would like to share some interesting facts that you can only find at a pork specialty store.

It's about fillet meat.

What image comes to mind when you hear the word "tenderloin"?
"Soft," "Light," "A little luxurious," "I love it!"
I can almost hear those voices.

At Ark Tategamori, we also serve fillet meat, but we also"Filet"It is written as follows.

Some of you may be thinking, "Huh? Isn't it fin?" or "Isn't that a typo?"
But this actually has meaning.

"Filet"is French"filet"The word's origin is "thin, thread-like" and originally referred to something long and thin.

This is fillet meat from Tategamori Plateau pork.
I see, it certainly has a long, slender and delicate shape.

As this word was introduced to Japan, the pronunciation changed and the term "hire" became common.
However, at Ark Tategamori, we have chosen to use the original French"Filet"It is written as:
In the Kansai region, it is also sometimes called "here."
In other words, "fin," "filet," and "fillet" all refer to the same part of the fish.

So, what part of the pig is this "fillet"? Well, it's a long, thin muscle located inside the spine. It's hidden further back in the loin. It's a little hard to find, isn't it? (laughs) Because it's a part that doesn't move much, there's almost no sinew. There's also very little fat.
Only two long, thin pieces of about 500g each can be obtained from one cow, making this cut extremely rare. Furthermore, it is considered the most tender and "highest quality" cut of meat among the many cuts of meat available.
I understand why it's a little pricey.

By the way, you may have heard the term "filet" used to refer to things other than meat.
You'll find things like "chicken fillet sandwiches" and "filet-o-fish burgers" at fast food restaurants, and "salmon fillets" and "white fish fillets" at supermarkets.
In this case, "fillet" means "boneless fillet," meaning "a fillet that has had the bones removed to make it easier to eat."

When I think about that sort of thing,"Filet"I feel like this word is a rather special name given to something that is soft and gentle.
...Maybe it's a bit forceful though (laughs)
However, the English name for fillet meat is "tenderloin."
Tender also means kind, so it's not entirely wrong, right? (laughs)
