I would like to briefly explain the background of this product, Cut-Off Stock. Before cutting and selling Tategamori Highland Pork, we carry out a shaping process, which basically involves arranging the meat into a neat shape. During this process, we inevitably end up with leftover meat, so our head butcher, Kamoda, wondered if there was some way to utilize this, and started commercializing it three years ago.

The word "cut-off" is used in many different ways in many different industries. In the case of meat, it is used to mean scraps of meat.
Surprisingly, this cut-off stock has proven popular with many customers. When I stand at the storefront, people ask me if I have any in stock today. It's quite surprising, but I'm happy.
It can be used in a variety of ways, such as making soup stock or blending it into dumplings, so we hope you will consider purchasing some when you come to the farm market.
