Tategamori Plateau Pork
The main ingredients suitable for shabu-shabu are
Loin, shoulder loin, belly, and thigh meat.
Loin and thigh are lean and have a light taste.
It goes well with shabu-shabu hotpot.
The belly is fatty and is great for dishes like yosenabe and kimchi stew.
It goes well with stewed vegetables and hot pot dishes.
Shoulder loin generally goes well with a variety of hot pot dishes.
I guess it's pork sukiyaki 🍲 after all!

The ingredients are simply green onions and Tategamori Highland pork [Shabu-shabu meat]
That's all.
It warms the body, promotes sweating, and is rich in vitamin C.
Use plenty of green onions ♪
Ingredients for 2 people
Tategamori Plateau Pork
[Loin or thigh for shabu-shabu]...200g
2 long green onions
Water...2 cups
Alcohol...50ml
Kelp...1 piece (5cm)
Salt... a pinch
Ponzu sauce...appropriate amount
Sudachi (citrus fruit) - appropriate amount
How to make it:
Preparation: Thinly slice the green onions diagonally.
Put water, sake, and kelp in a pot, put on the fire, and bring to a boil.
Let the alcohol evaporate.
Next, add salt.
(A very light amount of salt is fine.)
Add green onions and Tategamori Highland pork shabu-shabu meat
Once cooked, transfer to a serving dish and pour ponzu sauce over it.
Let's eat.
Sprinkle with shichimi pepper to taste
Squeeze some sudachi to change the flavor.
Tip: You can add more green onions to your liking!
If you want to add other vegetables, lettuce is a good choice.
This is a recipe using a small clay pot for one serving.
Adjust the amount of sauce depending on the size of the pot.
